The earliest record of our legendary margaritas. They were chosen by Montezuma to refresh Cortez in 1519, as they met outside of their favourite local restaurant. |

The earilest records of home delivery were recorded along the great wagon trains crossing the plains. Under the Volcano was there delivering our much requested Beef Chimichangas. |

Under the Volcano was honour in 1867 to be the official caterer to the Fathers of Confederation. If you check the official documents signed that day, you will find a few salsa stains. The event was commemorated in a 1927 postage stamp. |
